Cooking Pork

Temperature
According to USDA guidelines, pork chops, roasts and tenderloins can be safely cooked to medium rare at a final internal cooked temperature of 145 degrees Fahrenheit as measured by a food thermometer, followed by a three-minute rest time.

Storage
Raw pork products should be wrapped in plastic and stored on the lowest level of the refrigerator to prevent cross-contamination. Uncooked, fresh pork can be stored this way for two to four days, or as marked on the packaging. Once opened, lunch meat, hot dogs and bacon should be consumed within five to seven days. Well-wrapped pork products will last in the freezer for three to six months.
